The recent surge of colon cancer in younger adults — 1 in 5 diagnoses now occur in someone under the age of 55 — has made me rethink my family's diet. My husband has a history of colon cancer in his family, so we've recently been making a more conscious effort to cut back on processed foods and make sure we're meeting our daily fiber goals. However, the latter is easier said than done. Just 5% of Americans meet the recommended daily intake for fiber: 25 grams for women under 50 and 38 grams for men. Unfortunately, both my husband and I regularly come up short, but we've been steadily improving by prioritizing high-fiber foods in our everyday meals. When you're trying to incorporate more fiber into your everyday diet, it's best to start with fresh fruits and veggies, which also offer plenty of beneficial vitamins and minerals. I'm not the biggest fan of baked beans, but my husband absolutely loves them. While the canned beans do have lots of sodium, each serving also contains an impressive 8 grams of fiber — more than 25% of your daily requirement! So it's definitely worth keeping a can or two in your pantry for when you need a quick and easy dinner side. I haven't tried these fruit bars myself, but many people rave about them. They contain just two ingredients — apple and blueberries — and each bar has just 100 calories and 4 grams of fiber.
